In the late 1980’s, I acquired a passion for Southern Cajun cooking. My grandfather was a butcher and for as long as I can remember, he made homemade sausage. As my interest in cooking grew deeper and deeper, I began to start helping him.
I slowly developed my own seasoning recipe and style of sausage making. Since I’ve always thought of my next meal while eating my current one, I decided to start using my seasoning on other types of foods. To my surprise it was delicious. From that point on, I’ve only used my seasoning. The more I shared it with family and friends, the more I realized that other people liked it just as much as I did.
While enjoying an evening with family members, my mother-in-law started sprinkling my seasoning on her food and said, “this stuff is like Louviere's Cajun Spice, it’s so addictive”! We all began calling it Louviere's Cajun Spice as a joke, but little did we know that my hobby, turned joke would now become reality. So, Louviere's Cajun Spice has come to town!
